35+ Beautiful Asparagus Recipes

35+ Beautiful Asparagus Recipes to Kick Off the Spring Growing Season- I'm really looking forward to trying some of these!

Click photos for credit

I’m holding my breath just waiting for asparagus season to arrive! I have so many asparagus recipes I want to try!

This will be our first year with our own mature patch! Since I’ve only ever had spears that were bundled together in the grocery store, the thought of such fresh asparagus is thrilling! As with anything else I’ve ever tried Fresh vs. Shipped-in-From-Who-Knows-Where, I fully expect an entirely different flavor experience from that I’ve ever known!

Couple that with it being the first vegetable we’re able to cultivate and harvest after a long, cold winter and you can imagine the excitement building!

How I am longing for something fresh & GREEN on my plate! Aren’t you?

Insert here a mental picture of me lying on my belly in the soggy patch of grass next to the asparagus bed, chin on hands, listening to the tiny bubbling popping noises in the soil, the birds twittering, and watching. Just watching and waiting for that first head to poke through the soil.

That’s all it is though- a mental picture. It’s what I feel like in my excitement and what I might be doing if I could. In reality, I’m manning the door for System Violators who find it easier to come in the front door with “muddy” boots than go over to basement access door.

Spring. She’s the season of mud in these parts.

(And by mud I mean “mud.”)

So dreaming of this wonderfully versatile vegetable, the question arises, how shall I prepare it? Because of course, Spring is still able to lie to me and tell me all about the bounteous harvest that shall be mine.

Whether for breakfast, lunch, dinner, or a side dish, here is a collection of over 35 beautiful asparagus recipes to try this year!

Yum! I love asparagus so thanks for the recipes! I think you should get your “muddy” hands on “The Victory Garden Cookbook”. It’s delightfully filled with all sorts of recipes (in order according to each veggie/fruit/etc.) from your garden. A bit pricey, but I found it worth every penny. Blessings Quinn. 🙂

I’ve tried to grow asparagus a few times, but something ALWAYS sneaks about in the night and eats it :/ So for now I’m stuck with store-bought, but it gives me hope for how amazing your asparagus will taste fresh out of the garden!

Quinn, Asparagus straight from the ground is amazing. I love them prepared all kinds of ways, but nothing beats a salad with all garden fresh ingredients and raw asparagus to top it off. It seems like asparagus emerges much earlier where you are. Here it pops up around very late May or June.

I have no idea when it will come up LOL! It could be May or June for all I know- I just always thought it was the first thing to produce and since this is my first year with our own asparagus, I may be more eager than I ought to be. No sign of it yet. Lots of Canadian thistle though. Too bad that’s not edible 🙂

You forgot bacon wrapped asparagus. Wrap about three spears with two pieces of bacon. Lay on grill. Cook until bacon is done. Delicious.

How on earth was that even possible for me to overlook that?!! That’s the first way I ever ate asparagus and couldn’t believe I had gone over 2 decades of my life without it! Looks like it’s a good thing I did 35+ to allow me to make some additions 😉

So…which one if these would you suggest for someone who refuses to eat asparagus? I haven’t bought any in a long time because hubby doesn’t like it (or says he doesn’t, anyway – I have a hard time believing people when they tell me they don’t like it, haha!) but I just got a bunch in my CSA order. Thanks! (^_^)

Wrap it in thin bacon or proscuitto! I mentioned in another comment that I couldn’t believe I left that one off the list. It’s how I was introduced to the vegetable and it’s still one of my favorite ways! Hope you find a recipe that strikes gold 🙂

I once read about dried asparagus. do you know anything about this method of preserving and how to enjoy, if possible, this form of the most delightful vegetable on earth.
