Cheddar Baked Cod with Garlic Butter Biscuits
When we study geography in our homeschool, I like to cook international cuisine to supplement our studies. When we studied Ireland, I cooked several Irish meals and having had my fill of beefy recipes, I decided to try making Cod Cobbler.  (Or as I call it, “Cheddar Baked Cod with Garlic Butter Biscuits.”)

It turns out, I have a thing for Irish cooking. Thanks in large part to the amazing Forgotten Skills of Cooking cookbook, I have so many recipes I make from that cookbook such as Old Hen in Parsley Sauce, it definitely is one of my top cookbooks to have in the simple homestead kitchen! Right now my new obsession is Boxty. They’re pretty much like a fried mashed potato pancake. I know, sounds a little strange. But they are so good! I made them and put a pulled pork shoulder roast I made with my homemade Smoked BBQ sauce! Oh man! Crazy good!

But let’s get back to Cod Cobbler before I put you in the mood for something other than fish. Put a biscuit on whatever you like, I had to rename it to Cheddar Baked Cod with Garlic Butter Biscuits because in my mind cobbler is sweet, made with fruit, and served with a scoop of ice cream… not sure that flavor combination works with fish.

In a nutshell, it’s cod (or any firm white fish I imagine) baked in a cheese sauce. Then it’s topped with a flaky biscuit (which they call a scone.) I personally felt the original recipe made too much cheddar cheese sauce. There was a ton left over that was thrown away. Over the years, I’ve tweaked that recipe quite a bit to make it work out better. At this point, pretty much the fish part is the same. But that’s ok. Because it’s even more delicious than it ever was. The biscuits are lighter and more flavorful, they cook more easily with this method. (Before the biscuits often wouldn’t cook on the bottom.) The good news is that it cooks up beautifully every time now, tastes delicious, and is a pleasant change from the same old fried fish and coleslaw.

Cheddar Baked Cod with Garlic Butter Biscuits

Cheddar Baked Cod with Garlic Butter Biscuits

Ingredients

  • 1 1/2 pounds wild cod
  • Sauce:
  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup milk
  • 1 cup cheddar cheese, grated
  • Biscuits:
  • 3 cups flour
  • 1 ½ Tablespoons baking powder
  • 1 teaspoon salt
  • ¼ teaspoon garlic salt
  • 4 Tablespoons cold butter, cubed
  • 1 cup cheddar cheese, grated
  • ¾ cup milk
  • Garlic Butter:
  • 3 Tablespoons butter
  • ½ teaspoon garlic salt
  • ¾ teaspoon parsley

Instructions

  1. Preheat the oven to 375 .
  2. Arrange the fish in a baking dish and sprinkle generously with sea salt and pepper.
  3. Prepare the biscuit batter by whisking together the dry ingredients. Cut in the butter. Stir in the cheese. Stir in the milk.
  4. Prepare a white sauce by melting the butter in a small saucepan. Add the flour, salt, and pepper whisking vigorously until smooth. Add the milk and continue to cook, whisking constantly, until boiling. Boil and whisk for five minutes. Add the grated cheddar and whisk until smooth.
  5. Pour the cheddar sauce over the fish.
  6. Bake the fish for 20 minute.
  7. Drop the biscuits by the tablespoonful on top of the fish and bake for 15 minutes.
  8. Remove from the oven and brush with garlic butter. Bake for an additional 5 minutes until the biscuits are baked through on the bottom and golden on top.
  9. Re-brush with garlic butter if desired.
