Cheddar Baked Cod with Garlic Butter Biscuits

Ingredients

  • 1 1/2 pounds wild cod
  • Sauce:
  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup milk
  • 1 cup cheddar cheese, grated
  • Biscuits:
  • 3 cups flour
  • 1 ½ Tablespoons baking powder
  • 1 teaspoon salt
  • ¼ teaspoon garlic salt
  • 4 Tablespoons cold butter, cubed
  • 1 cup cheddar cheese, grated
  • ¾ cup milk
  • Garlic Butter:
  • 3 Tablespoons butter
  • ½ teaspoon garlic salt
  • ¾ teaspoon parsley

Instructions

  1. Preheat the oven to 375 .
  2. Arrange the fish in a baking dish and sprinkle generously with sea salt and pepper.
  3. Prepare the biscuit batter by whisking together the dry ingredients. Cut in the butter. Stir in the cheese. Stir in the milk.
  4. Prepare a white sauce by melting the butter in a small saucepan. Add the flour, salt, and pepper whisking vigorously until smooth. Add the milk and continue to cook, whisking constantly, until boiling. Boil and whisk for five minutes. Add the grated cheddar and whisk until smooth.
  5. Pour the cheddar sauce over the fish.
  6. Bake the fish for 20 minute.
  7. Drop the biscuits by the tablespoonful on top of the fish and bake for 15 minutes.
  8. Remove from the oven and brush with garlic butter. Bake for an additional 5 minutes until the biscuits are baked through on the bottom and golden on top.
  9. Re-brush with garlic butter if desired.
